This meal is perfect if you’re wanting leftovers for lunch the next day. It reheats really well and tastes just as good as when you first cooked it.
I’ll admit, this is definitely one of my go-to meals. I’ve even made this for dinner twice in the same week before because it’s so simple, healthy and it tastes THAT good!
I found this recipe on Pinterest a long time ago and have been using it almost weekly ever since. I’ve tweaked it to fit my family’s tastes and will list the changes I’ve made below.
Need an idea for a side dish? I typically saute zucchini squash with a little extra virgin olive oil, salt, pepper, garlic powder, onion powder and whatever other seasonings I have the taste for at the time. Usually Pampered Chef’s Bell Pepper Herb Rub.

These are the ingredients you’ll need in order to make the recipe:
- Chicken Breasts
- Limes
- Cilantro
- Garlic
- Cumin
- Chili Powder or Cayenne Pepper
- Extra Virgin Olive Oil
- Avocado (optional)
Here are the changes I’ve made for my family:
The recipe calls for 3 to 4 limes and the zest of 1 lime. We found this to be too much so I use only 2 limes (depending on how juicy they are) and I rarely use the lime zest. I’ve made it both ways and honestly don’t miss it when it’s not in there. Saves me an extra tool to wash too – gotta love that!
I also add more cilantro than the recipe lists because I’m a big cilantro fan. I put it right in the pan and mix it up with the chicken towards the end.
The recipe calls for chili powder OR cayenne pepper – we always use chili powder. Just depends on your preference.
