Happy Saturday!
I really enjoyed all of my meals last week. The Slow-Cooker Salsa Chicken that I made on Wednesday was SO good! I loved the fact that I had all kinds of leftovers for my husband to use for a couple more days.
My cheat meal for dinner on Sunday was amazing. It’s been a long time since I made the chicken fajitas and they were delish! The chips and salsa was really tasty too. If you aren’t sure what I’m talking about, just check out my weekly food plan from last week.
Here is my meal plan for next week…
Monday
Does this look familiar? Well, I’ll be making Lime Cilantro Chicken AGAIN this week for dinner. Find the recipe HERE.
Tuesday
I’ll be making Parchment Baked Chicken with steamed broccoli and cauliflower for dinner on Tuesday. I’ve had this in my meal plans before (find it here).
Wednesday
Dinner on Wednesday will be grilled shrimp and asparagus.
I use Mrs. Dash Garlic & Herb seasoning and fresh lemon juice for the shrimp. Then I grill them in a tray (made of aluminum foil) for 5-7 minutes on medium-high heat.
Since I’ll be using the grill to cook the shrimp, I will go ahead and cook the asparagus on the grill as well.
Make a foil packet for the asparagus. Lay them inside and drizzle on a little olive oil. Sprinkle with salt, pepper and whatever other seasonings you like. Squeeze fresh lemon juice over the asparagus. Close up the packet and cook on the grill for 10-15 minutes (until asparagus is tender).
Thursday
On Thursday I will be making grilled pork chops and oven roasted Brussels sprouts. Click here to check out a previous weekly meal plan to find out how I make this meal.
Friday
Steak Friday has arrived! I’m planning to switch it up this week and make Rosemary Steak Skewers with veggies.
Here is how you can make this dish…
Ingredients:
- boneless top sirloin steak, cut in 1 inch chunks
- Red Bell Pepper, cut in 1 inch chunks
- Yellow Bell Pepper, cut in 1 inch chunks
- Cherry Tomatoes
- Fresh Rosemary, chopped
- Olive Oil
- Salt
- Pepper
Directions:
In a bowl, mix steak chunks with salt, pepper, rosemary and olive oil. Use metal or wood skewers and thread on the steak, bell pepper and cherry tomatoes. Grill on medium-high heat for about 8 – 10 minutes (turning a few times throughout).
Saturday
You’ll notice that I don’t have anything listed for dinner on Saturday. I will be at a bridal shower and bachelorette party for one of my very best friends. 🙂 I still plan on eating a healthy dinner…just not sure what that will be quite yet.
Sunday
Dinner on Sunday will be grilled shrimp with Mrs. Dash Garlic & Herb seasoning and fresh lemon juice. Plus steamed broccoli.
