Last week I shared all of the foods I was planning to eat for the week. I am doing the same for this upcoming week.
Valentine’s Day is on Tuesday. If you read my 14 Days of Valentines post then you already know that my husband and I typically stay in and cook dinner together rather than deal with busy restaurants. That means it will be easier for me to stay on track this week. Yeah!
Also, we have a wedding to attend on Saturday so I won’t be able to plan out dinner for that day because I don’t know what I’ll be eating just yet.
Here is my meal plan for this week…Monday
I will be making grilled pork chops and Brussels sprouts for dinner on Monday. I will make a couple extra pork chops to put with a salad for lunch on Tuesday.
To make the pork chops, I marinate them in soy sauce, lemon juice, olive oil, garlic powder, onion powder, oregano, a little brown sugar and fresh ground pepper. Then I cook them on the grill at medium heat for 8-10 minutes or until cooked. So good!
For the Brussels sprouts, I like to roast mine in the oven. I cut them in half and put them in a bowl. Then I sprinkle on some salt, pepper, onion powder and garlic powder. I drizzle on some olive oil and mix it all up. I cook them flat side down in the oven on a baking sheet (wiped down with a small amount of olive oil) at 400 degrees for about 25 – 30 minutes (moving them around on the baking sheet halfway through).
Tuesday
For dinner on Tuesday, I will be making grilled chicken and a salad. You can use whatever seasonings you like on your chicken. I will be using salt, pepper, garlic powder, onion powder and Mrs. Dash Garlic & Herb. I like to baste my chicken with a little Italian dressing while it’s grilling. It helps keep it moist.
