Happy Saturday!
Things have been super busy this past week so I’m keeping my meal plan for the upcoming week similar to my meal plan from last week. I’m excited about adding in two new meals for dinner – one I have made many times and the other I am trying out for the first time. Be sure to check them out below.
Monday
I will be making Lime Cilantro Chicken on Monday for dinner. This is nothing new – I make this almost every week!
Tuesday
Keeping things simple on Tuesday and making a grilled chicken salad for dinner.
Wednesday
I’m so excited to make the Slow Cooker Salsa Chicken for dinner on Wednesday. I have always wanted to try this meal but just haven’t gotten around to it yet. I have no clue why either because it sounds SO simple!
You only need two ingredients – chicken breasts and your favorite salsa.
Place the cleaned/trimmed chicken breasts in the bottom of your slow cooker. Sprinkle with a little sea salt and pepper. Pour about 2 cups of salsa over the chicken. The amount of salsa you will need depends on how many chicken breasts you are cooking. I will be making 3 pieces.
Cook on low for 6-8 hours (or on high for 2-4 hours). When the chicken is finished cooking, remove it from the slow cooker (you don’t want to scratch it) and use two forks to shred the chicken.
Serve as is with a side of rice and/or veggies OR in a tortilla with fixings. You can store this in the refrigerator for leftovers.
Thursday
Another easy meal day for me – making grilled chicken salad for dinner.
Friday
Steak Friday is something my husband and I have been doing for years. This Friday will be no different. 🙂 We’ll be using our favorite Montreal Steak seasoning too.
Saturday
We will be making grilled shrimp and asparagus for dinner on Saturday.
Sunday
Dinner on Sunday is going to be our cheat meal for the week. I found this Chicken Fajitas marinade recipe by Ree Drummond a couple years ago and now my husband won’t let me make it any other way. I don’t make it as often as I would like because the marinade calls for sugar and obviously I try to avoid sugar as much as possible. It’s so delicious though!
We also enjoy a nice homemade salsa with tortilla chips. Again, I use Ree Drummond’s Restaurant-Style Salsa recipe and put my own twist on it. One major change I make is using fresh tomatoes rather than canned. It’s all about personal preference. I like to add a small can of green chilies too. I also put the salsa in a large sauce pan and let it cook on simmer for about 20 minutes (stirring occasionally). It really brings out the colors and flavors. Plus, it makes it less frothy.
