Happy Saturday!
Things have been busy around here. One of my very best friends is getting married in the next couple weeks and I have been given the greatest honor of being her Matron of Honor. So I’ve been trying to watch what I eat to make sure I will still fit perfectly in my dress.
Here is my meal plan for next week…
Monday
On Monday, I will be making One-Pan Pesto Chicken and Vegetables. I found this recipe on Pinterest and it is easy and really delicious. Click HERE for the recipe.
Tuesday
Tonight I will be making another easy meal – Oven-Roasted Chicken and Veggies.
Ingredients:
- 3 chicken breasts, cut into chunks
- 2 bell peppers (red & yellow), cut into chunks
- 1/2 red onion, cut into chunks
- 2 zucchini, cut into chunks
- 1 1/2 – 2 cups broccoli florets
- olive oil
- seasonings
Directions:
- Preheat oven to 475 degrees F.
- Place the chicken chunks and chopped veggies on a baking sheet. Add olive oil, sea salt, pepper and whatever seasonings you like. Mix to combine.
- Bake for 15 – 20 minutes or until the chicken is cooked through.
Wednesday
On Wednesday, my husband and I will be attending the rehearsal dinner for our friend’s wedding. So excited! We’ll be enjoying Italian food at a restaurant called Tutti Santi.
Thursday
On Thursday, I will be making another fabulous dish I found on Pinterest – Honey Sriracha Chicken Skewers with Vegetables. Click HERE for the recipe.
Note: I love pineapple and I have made this meal several times. Each time I feel that the pineapple is a little too sweet. My husband LOVES it and doesn’t have any issues with the pineapple. For myself, I usually only eat 2 or 3 pieces of it.
Friday
I’m looking forward to Steak Friday this week. My husband grills amazing steaks! If you’ve seen my past meal plans you know that we like to season our steaks with Worcestershire sauce, sea salt, garlic powder, onion powder and Montreal Steak seasoning.
Saturday
For dinner on Saturday, I will be making Grilled Tilapia (in foil packets). The recipe below is for 2 tilapia filets.
Ingredients:
- 4 oz. tilapia filets
- 3 roma tomatoes, chopped
- 1 cup spinach
- 1/4 cup green onion (you can also use red onion)
- 1/2 cup basil, chopped
- 1 1/2 cups asparagus, chopped (or you can leave them whole)
- olive oil
- lemon (juice only)
- Mrs. Dash seasoning (or any type of seasoning you prefer)
- Old Bay seasoning
- 2 sheets of aluminum foil
You can also add other vegetables such as carrots or zucchini. I’ve done both of those in the past and they are really good.
Directions:
- Heat grill to medium.
- (Repeat steps 2 – 4 for each piece of tilapia.) Rub a small amount of olive oil on the center of piece of foil so the fish and other ingredients do not stick. Place spinach in the center. Rest the fish on top of the bed of spinach.
- Sprinkle Mrs. Dash seasoning and Old Bay seasoning on the fish. Then top with tomatoes, green onion, basil and asparagus.
- Squeeze lemon juice over all of it and then wrap the foil around loosely (so it can steam) to make a packet.
- Grill packets for 8 – 10 minutes until the fish is cooked all the way through.
Sunday
Cheat Meal Alert!! We are treating ourselves to an afternoon out with some friends on Sunday. We will be eating dinner at one of our favorite Mexican food restaurants.
